Em dashes, en dashes and hyphens: which to replace with what
Three characters look similar and do different jobs. The hyphen joins words and breaks lines. The en dash, roughly the width of an n, marks ranges: pages 12 to 18, Monday to Friday. The em dash, roughly the width of an m, marks a break in a sentence, the job a comma, colon or parenthesis also does. Replacing them all with the same thing is what produces text that reads slightly wrong everywhere.
The reason to remove em dashes is rarely that they are incorrect. It is that they have become a marker: generated text produces them at a rate ordinary writing does not, so a reader who has learned the pattern sees the dash before they read the sentence. In a house style that already avoids them, a single one stands out in the same way.
What to replace an em dash with depends on what it was doing. A dash marking a parenthetical aside becomes a pair of commas, or brackets if the aside is a genuine digression. A dash introducing an explanation or a list becomes a colon. A dash marking an abrupt turn becomes a full stop and a new sentence, which is usually the strongest option and the one people reach for last. A blanket substitution of a comma for every dash produces sentences with too many commas, and that is its own tell.
En dashes in ranges should usually be left alone, or replaced with the word to rather than a hyphen. Writing pages 12-18 with a hyphen is a typographic error rather than a style choice, and it is the kind a copy editor will quietly correct.
Spacing conventions differ by house style and matter more than people expect. Some styles set em dashes closed up against the words, others with spaces around them. Mixing both in one document is more noticeable than either convention used consistently, so if you are replacing some dashes and keeping others, check that the survivors agree with each other.
