Why does it change em dashes?
Language models reach for the em dash far more often than people typing on a normal keyboard do, so a run of them is the quickest way to spot generated prose. Each one becomes a plain hyphen. If that is the only change you want, use the Remove Em Dashes tool instead.
Will it remove my bold or italic formatting?
No. This tool works on characters, not on markup. To take out Markdown syntax such as ** and #, use the Strip Markdown tool.
